RECIPE: AMERICAN PANCAKES
Ingredients (for 8-10 pancakes):
200g plain flour
2 tbsp caster sugar
2 tsp baking powder
A pinch of salt
2 large eggs
300ml milk
2 tbsp melted butter (plus extra for cooking)
1 tsp vanilla extract (optional)
Method:
- Mix dry ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Whisk wet ingredients: In a separate bowl, beat the eggs and then add the milk, melted butter, and vanilla extract (if using). Mix well.
- Combine: Make a well in the centre of the dry ingredients and pour in the wet ingredients. Gently stir until just combined. Don’t overmix; it's okay if there are a few lumps.
- Cook the pancakes: Heat a little butter or oil in a frying pan over medium heat. Pour about 1/4 cup (60ml) of batter into the pan for each pancake. Cook for 1-2 minutes until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown and cooked through.
- Serve: Stack the pancakes on a plate and serve with your favourite toppings (e.g. maple syrup, fresh fruit, or a dusting of icing sugar).

RECIPE: FRENCH CREPES
Ingredients (for 8-10 crepes):
125g plain flour
2 large eggs
300ml milk
1 tbsp melted butter (plus extra for cooking)
A pinch of salt
1 tsp vanilla extract (optional)
1 tbsp caster sugar (optional, for sweet crepes)
Method:
- Make the batter: In a large bowl, whisk together the flour, eggs, and a pinch of salt. Gradually add the milk, whisking to avoid lumps. Once smooth, stir in the melted butter and vanilla extract (if using). For sweet crepes, add the sugar here.
- Rest the batter: Let the batter sit for at least 30 minutes (if you have time), but you can also cook them right away.
- Cook the crepes: Heat a small amount of butter in a non-stick frying pan over medium heat. Pour in a small ladle of batter (about 2-3 tbsp) and tilt the pan to spread the batter into a thin layer. Cook for about 1-2 minutes until the edges lift and the bottom is golden. Flip and cook for another 30 seconds to 1 minute on the other side.
- Serve: Stack the crepes and serve with your favourite fillings or toppings, such as lemon and sugar, Nutella, fresh fruit, or whipped cream.
