Hidden veg tomato sauce / pizza sauce

My name is Kayleigh and I have an obsession with my soup maker!

Phew, good to get that out of the way! My parents brought me a soup maker for Christmas and I've used it at least four times a day since. But not to worry if you don't have a soup maker you can make this hidden veggie soup recipe on the hob and blend with a stick blender just as easily.

My kids love a good pasta sauce , however I was unhappy with the amount of salt and sugar in the store brought ones and so developed this recipe which is super tasty, versatile (can be used from spag bol, to chilli, to soup, to tuna pasta bake or as a pizza sauce (see our 2 ingredient pizza recipe here).

Ingrediants (makes enough for a family of 4 with pasta or for two bowls of soup and toppings for 3 pizzas)

  • A tin of plum tomatoes
  •  A carrot
  • half of a broccoli (trust us on this)
  • a whole onion
  • 2 cloves of garlic
  • a whole red pepper
  • 250ml of low salt stock
  • Dried Italian herbs
  • A good squeeze of tomato puree (probably around a table spoon)
  • (optional add a sprinkle of paprika for a richer flavour or chilli flakes to add a little spice)

If you have a soup maker, cut the veggies up into inch sized pieces but everything in the soup maker on the smooth setting and relax (you are done!)

If you don't brown the onion in a pan with a little oil first in a saucepan then add all the ingredients, bring to the boil, reduce the heat and simmer for around 20 minutes. Then remove from the heat and blend with a stick blender. There are no visible bits and it tastes amazing.

Eat it on its own as soup, add to cooked pasta for a healthy quick dinner with whatever protein you like (tuna, ham, lentils or none at all), add cooked mince to make an amazing Bolognese , add chilli and kidney beans to that mince and sauce mix to make chilli con carne, or use a ladle full of it to top your pizza bases before adding toppings.

Its fool proof, its easy, its quick and its healthy. You can also freeze it!

You can of course get creative and add different ingredients to your taste :)
